Pumpkin Spice & Everything Nice

Alright so we are officially switching to that fall time mood, and I've been super inspired by all the white girls ordering pumpkin spice lattes (I am one of those), so I decided to go on the hunt through Google to find a Pumpkin Spice Cocktail Recipe. Found the coolest website of my life, Yummly.com that customizes recipes for you and I am just really really excited about it...

P.S. I suggest you find a super fancy chef to make this for you...
- 1/2 cup water
- 1/2 cup pure maple syrup
- 2 tbsps pumpkin purée
- 1 in fresh ginger (chunk of, peeled)
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/8 tsp ground nutmeg
- 1 pinch ground cloves
- 1 pinch ground allspice
- whisky
- ice cubes
- soda water
- cinnamon
- sugar

In a saucepan over medium-high heat bring all the ingredients for the simple syrup to a simmer. Reduce heat to medium-low and simmer for about 5-8 minutes, stirring often. Taste test and adjust seasonings if necessary. Strain the mixture through a fine sieve. Discard the ginger root.

Mix sugar and cinnamon on a plate.

Wet the rim of each cocktail glass. Dip each glass into the sugar and cinnamon mixture.

For each cocktail combine 1-2 tablespoons of the simple syrup with 1 1/2 ounces of whisky and top with soda water. Stir vigorously (a little separation may happen) until well combine. Add a few ice cubes and enjoy!
